What We're Eating Wednesday: Skinny Pumpkin Pie Smoothie


Tis the season for everything PUMPKIN! This tasty smoothie gives you all the flavor of your favorite holiday pie, but none of the guilt.

Feel free to play around with this recipe. By using regular pumpkin purée, you get to decide how much sweetener and spice you add. I like to mix the pumpkin, milk, stevia, and spices together in a bowl before pouring it into the blender. This way you can taste as you go. Some days I want a little extra nutmeg, others more cinnamon. The ice will dilute the flavor of the spices, so it’s better to err on the side of just a smidge too much!

I also like to add a scoop of vanilla vegan protein, especially if I'm enjoying this after a workout. Again, play around with it!

Serves 1

¼ cup pumpkin purée (NOT pumpkin pie filling)
½ cup + 2T unsweetened almond milk
1 tsp stevia
¼ tsp ground cinnamon
1/16 tsp ground nutmeg
1/16 tsp ground ginger
1 ½ cup ice cubes
  • Add everything except the ice to a blender, and pulse until combined. Add the ice, and blend until smooth. 
  • Serve immediately.
  • Any milk (1%, 2%, whole, soy, rice, etc.) may be used.
  • Substitute your favorite sweetener in place of the stevia. A few examples: pure maple syrup, agave syrup, sugar, etc.
