Protein-Packed Quinoa Veggie Salad


Heading to the beach this weekend? shared this recipe and we had to share it! Plus, we can't wait to try it for ourselves!


1 cup cooked quinoa
1 1/2 cup edamame
3 carrots julienned
1 cup red cabbage shredded
1/2 cup yellow pepper, diced
1/2 cup red pepper, diced
2 tbsp rice vinegar
2 tbsp sesame oil
1 tsp sesame seeds
3 tsp fresh ginger, finely minced

First, mix together your liquid ingredients, sesame seeds & ginger. Set aside.

Next, in a large bowl, combine your quinoa, edamame, carrots, red cabbage & peppers; mix them well! Drizzle on your dressing and you're out the door!

Not only is this a tasty dish to whip up for a busy weekend, but great for a BBQ or night in with the girls. And...packed with so much goodness! Quinoa is rich with protein & fiber, you get some antioxidants with the peppers, your iron with edamame and red cabbage is a great anti-inflammatory.
